เกียรติโอชา ข้าวมันไก่ キアット・オーチャー發清

I bumped into Kiat Oochaa when I was wondering around the area. It was way pass noon and of course I’ve already had an early lunch but something about this ambiance, I had to stop by to check the place.

一人で散歩していた時に見つけ、お店の佇まいが良く、昼ごはんを済ませていたにもかかわらず寄って見る事に。

I ordered a regular portion of Hainanese Chicken rice and this is what it looked like. Plain and simple.

The chicken looks a bit dry in the picture but it wasn’t that bad at all. The sauce, green chili and ginger for the chicken was good. Not fancy kind of good, but plainly good, I don’t know if this makes sense, but everything was treated in a minimalistic way but it was just “right” in an old school way.

Hainanese Chicken rice is a very popular dish in Thailand and in Thai we call them “Kao Man Gai” and is derived from Hainan, just like the Singapore version but the Thai’s version is different from the Singapore ones. The two are different from how the chicken are cooked to the sauce to dip with. I think the interpretation of what a good chicken is different among the two countries and as the cities culture sort of mixed and matched from being neighbors, the difference got blended but not quite merged into one dish.

We can get many versions of Kao Man Gai in Thai and I think Kiat Oochaa’s version is an old school version. Not changing their style to go on with the trends. I love cooking Kao Man Gai and tasting Kiat Oochaa’s gave me a lot of hints for my future Kao Man Gai trials back at home.

カオマンガイを一人前注文し、運ばれて来たのは上の写真。いたってシンプル。写真ではチキンがパサパサに見えますが、決してそうではありませんでした。一口食べてみると、あぁ、美味しい。タレが美味しい。付け合わせの生姜と青唐辛子が良い。タイの地鶏っぽいな。量産されている鶏じゃなくって、こだわって仕入れている感じがする。

タイのカオマンガイはシンガポールチキンライスと同じく元々は海南島の移民が広めた料理。ただ、シンガポールのチキンライスとタイはちょっと違う。時代と共に進化して来た過程で料理の解釈が違う。分かりやすい所から行くと先ずタレが違う。次に好む鶏肉の質感が違う。ご飯とスープも違いが、先にあげた二つの違いは大きい。タイの地鶏は肉質がしまってて、油っぽくなく味が濃い、シンガポールの鶏肉は大きく柔らかい感じがする。両方とも美味しいし、比べる必要は無いのですが、時代とともにタイ版とシンガポール版がごっちゃになり、それと流行とかが加わり、カオマンガイは色んな解釈・選択が増えた。何が言いたいかと言うと、キアット・オーチャーのガオマンカイは昔ながらの感じがした。流行を追わず、ひたすら同じ味を作り続けて来ている気がした。

ものすごく印象的だったので翌日夫を連れて行った。その時Grabタクシーを使って行ったのですが、タクシー運転手にどうしてここを知ったのかと聞かれ、たまたまだよと言うと、彼はキアット・オーチャーに５０年以上通っているのだとか。子供の頃によく父に連れて来てもらってて思い出の味なんだって。私の食へのセンスを誉めてもらいました。（笑）
